Homemad Beans in the Crock Pot

I could never cook beans until I got a crock pot.  Cooking beans now just can’t get any easier.  Here’s a recipe that is easy.  If you don’t like the heat you can omit the jalapeno peppers.
Leonora’s Pinto Beans 
2 lb. pinto beans (or lentils, black beans, your choice!)
2 bulbs garlic
3 jalapenos (fewer if you want less heat)
1 onion
3 Tbl. sea salt/kosher salt
1/4 cup canola oil
Sort and rinse beans.
Place in crock pot and cover with water – about 2 inches above beans.
Add salt, peeled garlic cloves (whole or halved), chopped jalapenos, and chopped onion to the pot.
Cook on High for 6 hours.
2 hours into cooking beans, add 1/4 cup oil.
Add water as needed. It may need another cup or two half way through cooking. Just watch to be sure that there is always a couple inches of water above the beans.
When they are done, place beans in plastic containers, with plenty of room to expand as they freeze.
I always write the type of beans and the date I cooked them on a piece of tape and stick it on each container.
Allow the beans to cool a bit before placing them in the freezer.

Creamy Avocado Citrus Salad Dressing

Creamy Avocado Citrus Salad Dressing – No Cream, No Oil!

  • 1 ripe avocado
  • ¼ c apple cider vinegar
  • ¼. c. honey
  • 3 T. lime juice
  • 1 clove garlic
  • ¼ c. cilantro
  • ½ small jalapeno (or your preference) (remove seeds and ribs for less heat)
  • ¼ c. water or more, to thin to preference
  • Salt and pepper, to taste
  1. Add all to food processor or blender and whiz up about a minute or until smooth and creamy. Add a drizzle of water (for salad dressing) to make it thinner. Keep it thicker to spoon on top of fish or chicken or pasta.

Digging for Treasure

When I was young, my neighbors and I, were always digging up the backyard looking for buried treasure.  We never found any treasure but we did make a mess of the backyard.  In the Bible Jesus tells us about a man who found treasure hidden in a field.  He purchased the field so he could claim the treasure.  Jesus’ parable is about the treasure you can find in the scriptures.  There is some treasure that is just below the surface and you don’t have to look far.  There is more treasure to be found when you dig deeper.  May God bless you richly as you hunt for His hidden treasure today.

Low Calorie Crunch Cauliflower

  • ½ Head of Cauliflower Florets (4 cups)
  • 2 Cups Gluten Free Bread Crumbs
  • 1 tsp Taco Seasoning ( or your favorite blend )
  • 2 Free Range Eggs – Beaten
  • 1 Tsp Mustard
  • Oil Spray
  • Dip
  • ½ cup Marinara
  • 1 Tbs Creamed Horseradish
  • Freshly Ground Sea Salt and Black Pepper
  1. Break cauliflower into florets.
  2. Beat 2 eggs into a bowl and add 1 tsp mustard.
  3. In a bowl with the breadcrumbs, add 1 tsp taco mix and seasoning.
  4. Dip cauliflower into egg and then drop into breadcrumbs and coat.
  5. Place on baking sheet covered in parchment paper and bake at 400F for 15-20 minutes. Turn half way through.
  6. Heat marinara sauce and add the horseradish (or any herb/ seasoning mix you like) and serve immediately.
