12 Days of Smoothies: Apple and Nut

Looking for an easy after school snack…this one is packed with fiber, but don’t tell the kids.

1 Gala or pink lady apple, cored and cut into chunks
1/4 cup nonfat plain yogurt
2 tablespoons roasted, salted peanuts
1 tablespoon honey
3/4 cup ice cubes


Put the apple, yogurt, peanuts, 2 tablespoons cold water and honey into a blender. Blend on high until the mixture is mostly smooth, about 1 minute. Add the ice cubes and blend until completely smooth. Add 1 to 2 tablespoons more water if needed to adjust consistency.

Excuses, Excuses

God called Moses to free his people from Egypt.

I don’t have the right skills. (Ex. 4:10) God shared His experience and skills. (Ex. 4:11,12)
I can’t. I’m not comfortable. (Ex. 4:13) God got angry and then let him use Aaron to help him. (Ex. 4:14-17)

Moses went on to be a great leader for God.  God knew he would.  Sometimes, we have to stop talking and just follow.

12 Days of Smoothie: Watermelon and Cucumber

Two summer time fruits worth of goodness…if you like that sort of thing.

One 2-inch piece English cucumber, peeled and roughly chopped (about 1/2 cup), plus one slice reserved for garnish
3 tablespoons lowfat buttermilk
1 tablespoon honey, optional
1/2 small lime, juiced (about 1 tablespoon)
2 cups cubed seedless watermelon, frozen



Put the cucumber, buttermilk, honey if using and lime juice into a blender. Blend on high until smooth. Add half of the frozen watermelon and blend until almost completely smooth, turning off the blender and pushing down on the ingredients with a spatula or wooden spoon as needed to help the blending process. Add the remaining frozen watermelon and continue to blend until smooth. Add 1 to 2 tablespoons of water if needed to adjust consistency. Pour into a glass and garnish with a cucumber slice.

The Plan

For I know the plans I have for you,” declares the LORD…  (Jeremiah 29:11 NIV)

When I read this I think, “OK, tell me the plan.” But God knows better.  If He tells me the plan I will go off and “work the plan”.  Instead, He wants me to know the Planner.  As I spend time with God, He will reveal the plan a little at a time on a “need to know” basis.  His promise is always I will be with you.  You don’t need a plan, you need Me.

In Christ, You are Significant

You ARE important even if the world tries to tell you different…God made you and therefore you are significant.
